THE WINES

Sancerre Cuvée Caillottes

The fresh, vibrant acidity and smoky minerality of this Sancerre make it a great match for Rachel’s simple yet tasty prawn and tomato salad. The grapefruit and citrus flavours act like a squeeze of lemon juice with the prawns and the slightly herbaceous nature of the wine works well with the tomato, fennel and basil.

St-Émilion Grand Cru Clos Villemaurine

Venison has a rich, gamey flavour and is quite lean. Some of the dominant flavours in Rachel’s main course are the herb and mustard crust and the autumn berry compote. Rachel loves to use seasonal fruits in many of her dishes and these will set off the flavour of the venison beautifully. This cracking St-Émilion Grand Cru has lots of sweet, supple Merlot fruit which will really complement the herbs and spices of this dish.

Coteaux du Layon Rochefort

Rachel’s pear tarte tatin really is an enduring classic and is as delicious as it looks. The melt in the mouth combination of caramelised pear, puff pastry, cardamom, raisin and crème fraiche provide the perfect foil for a luscious dessert wine such as Coteaux du Layon which has gorgeous sweetness and freshness in equal measure.
